Ingredients
- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 425°F (220°C) and grease a baking sheet with olive oil.
- Slice each chicken breast in half lengthwise to create four cutlets and pound them to an even thickness if needed.
- In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper.
- In another bowl, whisk the egg.
- Dip each chicken cutlet into the egg wash and then dredge in the breadcrumb mixture, ensuring even coating.
- Place the breaded chicken on the baking sheet and drizzle with olive oil. Bake for 15 minutes, then flip and bake for another 5-7 minutes.
- Remove chicken, top with marinara sauce and mozzarella cheese, and return to the oven for another 5-7 minutes until cheese is melted and bubbly.
- Serve immediately, garnished with fresh basil or parsley.
Notes
For variations, consider gluten-free breadcrumbs or add red pepper flakes for a spicy kick.
