Ingredients
- 2 large chicken breasts, boneless and skinless
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- Juice of 1 lime
- 1 tbsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup shredded cheese (optional)
- ½ tsp red pepper flakes (optional)
- Avocado slices (optional)
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish.
- In a small bowl, mix all the spices, coat the chicken with olive oil, and sprinkle the spice mix on both sides.
- Toss the sliced bell peppers and onion with olive oil, salt, and lime juice; spread in the baking dish and place the chicken on top.
- Bake uncovered for 22-25 minutes or until the chicken reaches 165°F (75°C). Broil for an additional 2-3 minutes for a charred effect.
- Let the chicken rest for 5 minutes before slicing and toss the vegetables in the pan juices to serve.
Notes
For extra flavor, marinate the chicken in the spice mix for 30 minutes before cooking. Use a meat thermometer to ensure perfect doneness.
