Description

Ingredients

  • 2 large chicken breasts, boneless and skinless
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • Juice of 1 lime
  • 1 tbsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup shredded cheese (optional)
  • ½ tsp red pepper flakes (optional)
  • Avocado slices (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. In a small bowl, mix all the spices, coat the chicken with olive oil, and sprinkle the spice mix on both sides.
  3. Toss the sliced bell peppers and onion with olive oil, salt, and lime juice; spread in the baking dish and place the chicken on top.
  4. Bake uncovered for 22-25 minutes or until the chicken reaches 165°F (75°C). Broil for an additional 2-3 minutes for a charred effect.
  5. Let the chicken rest for 5 minutes before slicing and toss the vegetables in the pan juices to serve.

Notes

For extra flavor, marinate the chicken in the spice mix for 30 minutes before cooking. Use a meat thermometer to ensure perfect doneness.
