Ingredients
- 4 medium baking potatoes (Russet or Yukon)
- 1–2 tablespoons olive oil
- Coarse salt (kosher or sea salt)
- Butter (optional)
- Sour cream (optional)
- Shredded cheese (optional)
- Chives or green onions (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the potatoes thoroughly and pat dry.
- Prick the potatoes with a fork several times.
- Rub the skins with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for about 45–60 minutes, or until the skins are crispy and the insides are soft.
- Remove from the oven and let cool for a few minutes.
- Cut a slit in the top of each potato and fluff the insides with a fork.
- Add your favorite toppings and serve.
Notes
For crisp skin, bake directly on the oven rack and avoid using foil. Let steam settle for fluffier insides after baking.
