Description
A warm, creamy seafood and shrimp chili featuring lobster, lump crab, and shrimp, complemented with beans, corn, and cheese.
Ingredients
- 5 oz Lobster meat
- 5 oz Lump crab
- 1 lb Shrimp
- 1 can Black beans
- 1/2 cup Corn, whole kernel frozen
- 2 Garlic cloves
- 1 can Great northern beans
- 1 cup Onion, chopped
- 2 cups Chicken broth, low sodium
- 1 can Tomatoes with chilis
- 1 tsp Olive oil
- 1 cup Colby and monterey jack cheese
- 3 oz Cream cheese
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and minced garlic; sauté until softened.
- Stir in the black beans, corn, great northern beans, chicken broth, and tomatoes with chilis.
- Bring to a simmer and cook for about 10 minutes.
- Add in the seafood (lobster, crab, and shrimp) and let it cook through.
- Reduce heat to low and stir in the cream cheese until melted and mixed.
- Finally, sprinkle the cheese on top and let it melt before serving.
Notes
Serve hot in bowls, adding extra shredded cheese if desired. Offer warm bread or crackers on the side, and a squeeze of lime for brightness.
