Ingredients

  • 4 Chicken breasts, boneless skinless
  • 1 cup Blueberries, fresh
  • 2 cloves Garlic, minced
  • 2 tbsp Thyme, fresh
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Honey
  • Salt and pepper to taste
  • 2 tbsp Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the blueberries, minced garlic, thyme, balsamic vinegar, honey, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Sear the chicken breasts on both sides until browned.
  5. Transfer the chicken to a baking dish and pour the blueberry mixture on top.
  6. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
