Ingredients
- 4 Chicken breasts, boneless skinless
- 1 cup Blueberries, fresh
- 2 cloves Garlic, minced
- 2 tbsp Thyme, fresh
- 1 tbsp Balsamic vinegar
- 1 tbsp Honey
- Salt and pepper to taste
- 2 tbsp Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the blueberries, minced garlic, thyme, balsamic vinegar, honey, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Sear the chicken breasts on both sides until browned.
- Transfer the chicken to a baking dish and pour the blueberry mixture on top.
- Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
- Let it rest for a few minutes before serving.
