A warm and comforting soup that soothes sore throats and fills you up with simple, wholesome ingredients.
Ingredients
- 1 lb Chicken breast
- 2 Bay leaves
- 2 medium Carrots
- 2 stalks Celery
- 4 cloves Garlic
- 1 medium Onion
- 1 tsp Oregano, dried
- 1/4 cup Parsley
- 1 tsp Thyme, dried
- 6 cups Chicken broth
- 1 tbsp Lemon juice, fresh
- 1 cup Pasta
- 1/2 tsp Red pepper flakes
- 2 tbsp Olive oil
- 1 Parmesan cheese
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery, and sauté until softened.
- Add minced garlic and cook for 1 minute until fragrant.
- Add chicken breast and cook until browned.
- Pour in chicken broth, add bay leaves, oregano, thyme, and red pepper flakes.
- Bring to a simmer and cook for about 20 minutes until the chicken is cooked through.
- Remove the chicken, shred it and return it to the pot.
- Add pasta and allow to cook until tender.
- Stir in lemon juice and parsley before serving.
- Serve hot, garnished with grated Parmesan cheese.
Notes
Store in the fridge for up to 3 days or freeze without pasta for up to 3 months.
