Description

A warm and comforting soup that soothes sore throats and fills you up with simple, wholesome ingredients.


Ingredients

  • 1 lb Chicken breast
  • 2 Bay leaves
  • 2 medium Carrots
  • 2 stalks Celery
  • 4 cloves Garlic
  • 1 medium Onion
  • 1 tsp Oregano, dried
  • 1/4 cup Parsley
  • 1 tsp Thyme, dried
  • 6 cups Chicken broth
  • 1 tbsp Lemon juice, fresh
  • 1 cup Pasta
  • 1/2 tsp Red pepper flakes
  • 2 tbsp Olive oil
  • 1 Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, carrots, and celery, and sauté until softened.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Add chicken breast and cook until browned.
  4. Pour in chicken broth, add bay leaves, oregano, thyme, and red pepper flakes.
  5. Bring to a simmer and cook for about 20 minutes until the chicken is cooked through.
  6. Remove the chicken, shred it and return it to the pot.
  7. Add pasta and allow to cook until tender.
  8. Stir in lemon juice and parsley before serving.
  9. Serve hot, garnished with grated Parmesan cheese.

Notes

Store in the fridge for up to 3 days or freeze without pasta for up to 3 months.
