Ingredients
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 2 ¼ teaspoons baking powder
- 1 ¼ teaspoons kosher salt
- 1 teaspoon ground cinnamon
- 2 large eggs (room temperature)
- ¾ cup whole milk (room temperature)
- 1 teaspoon vanilla extract
- 3 tablespoons unsalted butter (melted)
- 1 pint fresh blueberries
- Vegetable or canola oil for frying
- 1 ¼ cups confectioners’ sugar (for glaze)
- ¼ teaspoon vanilla extract (for glaze)
- 3–6 teaspoons water (for glaze)
Instructions
- In a medium-sized bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, combine the eggs, milk, vanilla extract, and melted butter. Stir until smooth.
- Add the wet ingredients to the dry ingredients, stirring just until combined.
- Gently fold in the fresh blueberries.
- Pour enough oil into a deep frying pan to reach about 2 inches. Heat to 375°F.
- Using a cookie scoop, drop spoonfuls of batter into the hot oil. Fry in batches for 2-4 minutes per side until golden brown.
- Transfer fritters to a paper towel-lined baking sheet.
- Prepare the glaze by whisking the confectioners’ sugar, vanilla extract, and water until smooth.
- Dip each cooled fritter into the glaze and place back on the baking sheet to set.
- Serve warm or at room temperature.
