Quick and fun pancake poppers that are perfect for busy mornings. Easy to make and loved by kids and adults alike.
Ingredients
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla extract
Instructions
- Preheat oven to 375°F and grease a mini muffin pan.
- Mix flour, sugar, baking powder, and salt in a bowl.
- Whisk milk, egg, butter, and vanilla in another bowl.
- Combine wet and dry ingredients gently.
- Scoop batter into muffin pan, filling each cup about 2/3 full.
- Bake for 10–12 minutes until golden.
- Cool slightly and serve warm with syrup.
Notes
Do not overmix the batter. You can add mini chocolate chips, cinnamon, or diced apples for variations. Store in an airtight container for up to 3 days.
