Ingredients
- 2 Chicken breasts
- 3 cloves Garlic
- 1 small Onion, diced
- 1 Red bell pepper, diced
- 1 cup Chicken broth
- 12 oz Penne or rotini pasta
- 1 tbsp Cajun seasoning
- 1 tsp Paprika
- Salt and pepper, to taste
- 2 tbsp Olive oil
- 1 cup Cheddar cheese, shredded
- 8 oz Cream cheese
- 1 cup Heavy cream
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced onion, garlic, and red bell pepper, and sauté until softened.
- Add the chicken breasts and cook until browned on both sides.
- Stir in chicken broth, Cajun seasoning, paprika, salt, and pepper.
- Mix in cream cheese and heavy cream, allowing it to melt and create a sauce.
- Combine the cooked pasta with the sauce and chicken mixture.
- Transfer to a baking dish and top with cheddar and parmesan cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
For a lighter version, use lower-fat cream cheese and heavy cream. Customize by adding vegetables such as spinach or mushrooms.
