Description

A warm and creamy Cajun Potato Soup with andouille sausage, potatoes, and bold spices, perfect for a cozy meal.


Ingredients

  • 1 lb andouille sausage
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (carrots, celery, onion), chopped
  • 2 tbsp Cajun spices
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 4 cups chicken broth
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced andouille sausage and cook until browned.
  3. Add chopped vegetables (carrots, celery, onion) and cook until softened.
  4. Stir in diced potatoes and Cajun spices, cooking for another minute.
  5. Pour in chicken broth, bring to a boil, then reduce to a simmer until potatoes are tender.
  6. Stir in heavy cream and cheddar cheese until melted and well combined.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes
