Ingredients
- 1 lb andouille sausage
- 4 medium potatoes, diced
- 2 cups mixed vegetables (carrots, celery, onion), chopped
- 2 tbsp Cajun spices
- 1 cup heavy cream
- 1 cup cheddar cheese, shredded
- 4 cups chicken broth
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced andouille sausage and cook until browned.
- Add chopped vegetables (carrots, celery, onion) and cook until softened.
- Stir in diced potatoes and Cajun spices, cooking for another minute.
- Pour in chicken broth, bring to a boil, then reduce to a simmer until potatoes are tender.
- Stir in heavy cream and cheddar cheese until melted and well combined.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
