Ingredients
- 1 lb chicken breast, cooked and shredded
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 cup corn, canned or frozen
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat a large pot over medium heat with a splash of oil. Add the diced onion and minced garlic.
- Sauté until onions are translucent, about 4–5 minutes.
- Add the sliced andouille to the pot. Cook until browned on both sides, about 3–4 minutes.
- Stir in shredded chicken, shrimp, drained white beans, corn, chicken broth, and Cajun seasoning.
- Bring to a gentle simmer and cook for about 20 minutes.
- Taste and add salt and pepper as needed. Garnish with chopped green onions. Serve hot.
Notes
Use fresh shrimp for the best texture. Adjust seasoning to taste.
