Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup corn, canned or frozen
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat a large pot over medium heat with a splash of oil. Add the diced onion and minced garlic.
  2. Sauté until onions are translucent, about 4–5 minutes.
  3. Add the sliced andouille to the pot. Cook until browned on both sides, about 3–4 minutes.
  4. Stir in shredded chicken, shrimp, drained white beans, corn, chicken broth, and Cajun seasoning.
  5. Bring to a gentle simmer and cook for about 20 minutes.
  6. Taste and add salt and pepper as needed. Garnish with chopped green onions. Serve hot.

Notes

Use fresh shrimp for the best texture. Adjust seasoning to taste.
