Quick and easy cookies made from cake mix, perfect for any occasion.
Ingredients
- 1 box (15.25 oz) of cake mix (any flavor)
- 2 large eggs, room temperature
- 1/3 cup vegetable oil or melted butter
- Optional mix-ins: chocolate chips, nuts, sprinkles, dried fruit (1/2 to 1 cup)
Instructions
- Preheat your oven to 350°F (180°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, combine the cake mix, eggs, and oil. Stir until the dough is smooth. Fold in any mix-ins.
- Drop rounded balls of dough onto the prepared baking sheets, leaving 2 inches between each cookie.
- Bake for 10-12 minutes, until the edges are lightly browned. The centers may look soft but will firm up as they cool.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
