Ingredients
- 1 ripe avocado
- 2 slices of whole-grain or sourdough bread
- 1 large tomato or a handful of cherry tomatoes
- 100g fresh mozzarella
- A handful of fresh basil leaves
- Balsamic glaze
- Salt and pepper to taste
Instructions
- Toast the bread until golden brown and crisp.
- Prepare the avocado by cutting it in half, removing the pit, and mashing or slicing it.
- Slice the tomatoes and mozzarella just before assembling.
- Tear the basil leaves by hand.
- Spread the avocado onto each slice of toast.
- Layer the tomatoes on top of the avocado.
- Add the mozzarella on top of the tomatoes.
- Top with torn basil leaves.
- Drizzle with balsamic glaze and season with salt and pepper.
