Delicious caramel apple cookies that combine the sweetness of caramel and the tartness of apples, perfect for fall gatherings.
Ingredients
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup finely chopped apples (Granny Smith or Honeycrisp)
- ½ cup soft caramels, chopped or caramel bits
- Optional: ½ cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Set aside.
- Cream together the softened butter and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well incorporated.
- Gradually add the dry ingredients into the wet ingredients and mix on low speed until just combined.
- Fold in the chopped apples and caramel pieces gently with a spatula.
- Scoop out tablespoon-sized portions of dough and shape into balls. Place them on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. If desired, drizzle with a glaze made of powdered sugar, milk, and vanilla.
Notes
Use firm apples and chop them finely for the best texture. You can freeze the dough for future baking.
