Description
A hearty and simple casserole filled with ground beef, veggies, and a delicious biscuit topping.
Ingredients
- 1 1/2 lbs Ground beef, Lean
- 1 tsp Garlic powder
- 4 oz Green chiles
- 1 Red bell pepper, chopped
- 1 Yellow onion, chopped
- 1/2 cup Mayonnaise
- 1/2 cup Salsa, mild
- 2 1/2 cups Biscuit mix
- 1 oz Taco seasoning mix
- Cooking spray
- 1 1/2 cups Cheddar cheese, shredded
- 1/2 cup Sour cream
- 1 cup Water
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add garlic powder, green chiles, bell pepper, onion, and taco seasoning to the skillet; cook until the vegetables are tender.
- In a separate bowl, mix mayonnaise and salsa.
- In another bowl, combine biscuit mix with water to form a dough.
- Spray a baking dish with cooking spray. Layer the beef mixture in the bottom, followed by the mayonnaise salsa mixture, and top with the biscuit dough.
- Bake for 25-30 minutes or until the biscuit topping is golden brown.
- Remove from the oven, top with cheddar cheese and sour cream, and serve warm.
Notes
Drain the cooked beef well to avoid a soggy top, and chop the vegetables small to ensure they cook evenly.
