Description

A hearty and simple casserole filled with ground beef, veggies, and a delicious biscuit topping.


Ingredients

  • 1 1/2 lbs Ground beef, Lean
  • 1 tsp Garlic powder
  • 4 oz Green chiles
  • 1 Red bell pepper, chopped
  • 1 Yellow onion, chopped
  • 1/2 cup Mayonnaise
  • 1/2 cup Salsa, mild
  • 2 1/2 cups Biscuit mix
  • 1 oz Taco seasoning mix
  • Cooking spray
  • 1 1/2 cups Cheddar cheese, shredded
  • 1/2 cup Sour cream
  • 1 cup Water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add garlic powder, green chiles, bell pepper, onion, and taco seasoning to the skillet; cook until the vegetables are tender.
  4. In a separate bowl, mix mayonnaise and salsa.
  5. In another bowl, combine biscuit mix with water to form a dough.
  6. Spray a baking dish with cooking spray. Layer the beef mixture in the bottom, followed by the mayonnaise salsa mixture, and top with the biscuit dough.
  7. Bake for 25-30 minutes or until the biscuit topping is golden brown.
  8. Remove from the oven, top with cheddar cheese and sour cream, and serve warm.

Notes

Drain the cooked beef well to avoid a soggy top, and chop the vegetables small to ensure they cook evenly.
