Ingredients
- For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- For the Chocolate Chip Cookie Dough:
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Prepare the Cheesecake Filling: In a medium bowl, beat the cream cheese, sugar, and vanilla until smooth. Scoop into small balls (about 1 teaspoon each) and freeze for 30 minutes.
- Make the Cookie Dough: In a large bowl, cream the butter and sugars until fluffy. Add eggs one at a time, followed by vanilla. In another bowl, whisk together flour, baking soda, and salt. Gradually mix dry ingredients into wet ingredients. Fold in chocolate chips.
- Assemble the Cookie Bites: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop 1 tablespoon of cookie dough, flatten slightly, place a frozen cheesecake ball inside, and wrap the dough around it completely. Roll into a ball and place on the sheet, spaced 2 inches apart.
- Bake and Cool: Bake for 10–12 minutes until the edges are golden brown but centers are slightly soft. Allow to cool on the pan for 5 minutes before transferring to a wire rack.
Notes
Ensure cheesecake balls are well frozen to prevent leaking. Use high-quality chocolate chips for the best melting texture.
