A deliciously crispy twist on classic mashed potatoes, these Cheesy Mashed Potato Puffs are perfect as an appetizer, snack, or side dish.
Ingredients
- 2 cups mashed potatoes (leftover or fresh)
- 1 cup shredded cheese (cheddar, mozzarella, or Parmesan)
- 2 eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 2 tablespoons chopped chives or green onions
- 1/4 cup breadcrumbs (optional for extra crispiness)
Instructions
- Preheat your oven to 375°F (190°C). Grease a mini muffin tin with oil or butter.
- In a large bowl, combine mashed potatoes, shredded cheese, eggs, garlic powder, onion powder, salt, pepper, and chives. Stir well until fully incorporated.
- Using a spoon or ice cream scoop, portion the mixture into the greased muffin tin, filling each cup about 3/4 full.
- Place in the oven and bake for 20-25 minutes or until golden brown and crispy on the edges.
- Let them rest for 5 minutes before gently removing them from the tin. Serve warm with sour cream or your favorite dipping sauce.
Notes
For extra crispiness, broil for the last 2-3 minutes.
