Ingredients
- 2 large Chicken Breasts
- 8 oz Spaghetti
- 1 can Cream of Mushroom Soup
- 1 can Diced Tomatoes with Green Chilies
- 2 cups Chicken Broth
- 2 cups Cheddar Cheese, shredded
- 1 medium Onion, diced
- 1 medium Bell Pepper, diced
- 2 cloves Garlic, minced
- 4 oz Cream Cheese (optional)
- 2 tbsp Jalapeños, chopped (optional)
- 1/2 cup Parmesan Cheese, grated (optional)
- Fresh Herbs (parsley, basil) for garnish (optional)
Instructions
- Boil chicken in a large pot of salted water for 20-25 minutes, then shred.
- In a separate pot, boil water, add salt, and cook spaghetti according to package instructions until al dente, then drain.
- In a skillet, sauté onions and bell peppers in olive oil, add minced garlic, then stir in soup, tomatoes, and broth; simmer for 10 minutes.
- Preheat oven to 350°F. Combine shredded chicken, spaghetti, and sauce in a bowl, add half the cheddar cheese, mix well, and transfer to a baking dish. Top with remaining cheese.
- Bake for 25-30 minutes until cheese is bubbly and golden brown.
Notes
For a spicier dish, add jalapeños or use spicy diced tomatoes. To make it gluten-free, substitute spaghetti with a gluten-free option.
