Description

This cheesecake mixes the warm cinnamon taste of churros with a smooth cream cheese filling, making it cozy and perfect for sharing.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1 tsp ground cinnamon
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1/4 cup sour cream
  • 1/4 cup unsalted butter, melted
  • 1/4 cup additional sugar for topping
  • 1 tsp additional cinnamon for topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1 tsp ground cinnamon, and melted butter. Press this mixture into the bottom of a springform pan.
  3. In another bowl, beat the softened cream cheese, 3/4 cup granulated sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
  5. Pour the filling over the crust and spread it evenly.
  6. Bake for about 60 minutes, or until the center is set and slightly jiggly.
  7. Mix the 1/4 cup sugar with 1 tsp cinnamon, then sprinkle it over the cheesecake while it’s warm.
  8. Let it cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

Use room temperature cream cheese for a smooth filling and do not overbake the cheesecake.
