Description
This cheesecake mixes the warm cinnamon taste of churros with a smooth cream cheese filling, making it cozy and perfect for sharing.
Ingredients
- 1 1/2 cups graham cracker crumbs
- 1 tsp ground cinnamon
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1/4 cup sour cream
- 1/4 cup unsalted butter, melted
- 1/4 cup additional sugar for topping
- 1 tsp additional cinnamon for topping
Instructions
- Preheat your oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, 1 tsp ground cinnamon, and melted butter. Press this mixture into the bottom of a springform pan.
- In another bowl, beat the softened cream cheese, 3/4 cup granulated sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
- Pour the filling over the crust and spread it evenly.
- Bake for about 60 minutes, or until the center is set and slightly jiggly.
- Mix the 1/4 cup sugar with 1 tsp cinnamon, then sprinkle it over the cheesecake while it’s warm.
- Let it cool to room temperature, then refrigerate for at least 4 hours before serving.
Notes
Use room temperature cream cheese for a smooth filling and do not overbake the cheesecake.
