Ingredients
- 4 cups chicken broth
- 1 cup cooked chicken, shredded
- 2 cups egg noodles
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 carrots, sliced
- 1 celery stalk, chopped
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- In a large pot, heat some oil over medium heat.
- Add the diced onion, garlic, and grated ginger; sauté until fragrant.
- Stir in the carrots and celery, cooking for a few more minutes.
- Pour in the chicken broth and bring to a boil.
- Add the egg noodles and cook according to package instructions.
- Stir in the shredded chicken and let it heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
Notes
Use fresh ginger and garlic for the best flavor. Do not overcook the noodles if storing. For a gluten-free version, substitute with rice noodles.
