Description
A warm and comforting soup made with rotisserie chicken and fresh mushrooms, perfect for chilly days.
Ingredients
- 2 cups Rotisserie chicken
- 3 cloves Garlic, minced
- 8 oz Fresh mushrooms, sliced
- 1 medium Onion, chopped
- 1 tsp Fresh thyme
- 4 cups Low-sodium vegetable broth
- Salt and pepper to taste
- 1 tbsp Olive oil
- 1 cup Heavy cream
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and garlic, and sauté until they are soft and translucent.
- Stir in the fresh mushrooms and cook until they are browned.
- Add the rotisserie chicken to the pot.
- Pour in the vegetable broth and add fresh thyme, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
- Stir in the heavy cream and heat through before serving.
Notes
Serve hot with fresh herbs or a sprinkle of black pepper. Pairs well with crusty bread or green salad.
