Description

A warm and comforting soup made with rotisserie chicken and fresh mushrooms, perfect for chilly days.


Ingredients

  • 2 cups Rotisserie chicken
  • 3 cloves Garlic, minced
  • 8 oz Fresh mushrooms, sliced
  • 1 medium Onion, chopped
  • 1 tsp Fresh thyme
  • 4 cups Low-sodium vegetable broth
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 1 cup Heavy cream

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, and sauté until they are soft and translucent.
  3. Stir in the fresh mushrooms and cook until they are browned.
  4. Add the rotisserie chicken to the pot.
  5. Pour in the vegetable broth and add fresh thyme, salt, and pepper.
  6. Bring the soup to a boil, then reduce the heat and let it simmer for about 15 minutes.
  7. Stir in the heavy cream and heat through before serving.

Notes

Serve hot with fresh herbs or a sprinkle of black pepper. Pairs well with crusty bread or green salad.
