Ingredients

  • 2 large Eggs
  • 1/2 tsp Baking powder
  • 1/2 cup Oat flour
  • 1/4 tsp Salt
  • 2 tbsp Sweetener, Granulated
  • 1 tsp Vanilla extract
  • 1 Cooking spray or butter
  • 1 cup Cottage cheese, full-fat or low-fat
  • 1/4 cup Optional add-ins (blueberries, chocolate chips, or chopped nuts)

Instructions

  1. In a mixing bowl, combine eggs, cottage cheese, and vanilla extract until well blended.
  2. In another bowl, mix oat flour, baking powder, salt, and sweetener.
  3. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. If desired, fold in optional add-ins like blueberries, chocolate chips, or nuts.
  5. Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
  6. Pour batter onto the skillet to form pancakes of desired size.
  7. Cook for 3-4 minutes on each side, or until golden brown.
