Description
A quick and flavorful pasta dish featuring chicken, bowtie pasta, and broccoli in a zesty lemon cowboy butter sauce.
Ingredients
- 1 lb Chicken breasts, boneless skinless
- 12 oz Bowtie (farfalle) pasta
- 2 cups Broccoli florets
- 2 tbsp Olive oil
- 6 tbsp Butter, unsalted
- 1/2 cup Parmesan cheese, grated
- 1 tbsp Chives, fresh
- 1/2 tsp Garlic powder
- 1 Lemon, Juice and zest of
- 1 tsp Dijon mustard
- 1 tsp Cajun seasoning
- 1/2 tsp Paprika, smoked
- 1/2 tsp Red pepper flakes
- 1 Salt
- 1 Black pepper
- 1/2 cup Reserved pasta water
Instructions
- Cook the bowtie pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken breasts and cook for about 6-7 minutes on each side until fully cooked. Remove from skillet, let rest, then slice.
- In the same skillet, add the broccoli florets and sauté for about 3-4 minutes until tender.
- Add the butter and allow it to melt, then stir in garlic powder, lemon juice, lemon zest, Dijon mustard, red pepper flakes, chives, and parsley. Mix well.
- Add the cooked pasta and reserved pasta water to the skillet. Toss everything together until combined, adjusting seasoning as needed.
- Serve topped with sliced chicken and grated Parmesan cheese.
Notes
Slice the chicken after it rests to keep it juicy. Use reserved pasta water to loosen the sauce. Adjust salt and pepper to taste.
