Description
A warm and simple soup that tastes like an egg roll in a bowl, featuring ground pork, vegetables, and soft egg ribbons.
Ingredients
- 1 lb Ground pork
- 1 cup Carrots, shredded
- 4 cloves Garlic, minced
- 2 tbsp Fresh Ginger, grated
- 4 cups Green cabbage, shredded
- 0.5 cup Green onions, chopped
- 1 medium Yellow onion, diced
- 2 Eggs, beaten
- 6 cups Chicken broth
- 1 tsp Red pepper flakes or sriracha (to taste)
- 1 tbsp Soy sauce
- Salt and pepper to taste
- 1 tbsp Rice vinegar
- 1 tbsp Sesame oil
Instructions
- In a large pot, heat sesame oil over medium heat. Add yellow onion and cook until translucent.
- Stir in garlic and ginger, cooking for 1-2 minutes until fragrant.
- Add ground pork, breaking it up with a spoon, and cook until browned.
- Stir in carrots, cabbage, and chicken broth. Bring to a boil.
- Lower the heat and let simmer for about 15 minutes.
- In a separate bowl, whisk the eggs. Slowly drizzle them into the soup while stirring.
- Add soy sauce, rice vinegar, red pepper flakes or sriracha, and season with salt and pepper.
- Serve hot, garnished with green onions.
Notes
For best flavor, use fresh ginger. You can swap out pork for turkey or chicken, or use tofu for a vegetarian version.
