Description

A warm and simple soup that tastes like an egg roll in a bowl, featuring ground pork, vegetables, and soft egg ribbons.


Ingredients

  • 1 lb Ground pork
  • 1 cup Carrots, shredded
  • 4 cloves Garlic, minced
  • 2 tbsp Fresh Ginger, grated
  • 4 cups Green cabbage, shredded
  • 0.5 cup Green onions, chopped
  • 1 medium Yellow onion, diced
  • 2 Eggs, beaten
  • 6 cups Chicken broth
  • 1 tsp Red pepper flakes or sriracha (to taste)
  • 1 tbsp Soy sauce
  • Salt and pepper to taste
  • 1 tbsp Rice vinegar
  • 1 tbsp Sesame oil

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add yellow onion and cook until translucent.
  2. Stir in garlic and ginger, cooking for 1-2 minutes until fragrant.
  3. Add ground pork, breaking it up with a spoon, and cook until browned.
  4. Stir in carrots, cabbage, and chicken broth. Bring to a boil.
  5. Lower the heat and let simmer for about 15 minutes.
  6. In a separate bowl, whisk the eggs. Slowly drizzle them into the soup while stirring.
  7. Add soy sauce, rice vinegar, red pepper flakes or sriracha, and season with salt and pepper.
  8. Serve hot, garnished with green onions.

Notes

For best flavor, use fresh ginger. You can swap out pork for turkey or chicken, or use tofu for a vegetarian version.
