Description
A simple comfort dish blending sweet peas with a silky, buttery cream sauce.
Ingredients
- 1 lb fresh or frozen peas (about 3–4 cups)
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 1/2 cups milk (whole or 2%)
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Melt the butter in a medium saucepan over medium heat until it foams lightly.
- Stir in the flour and cook for about 1 minute to create a pale roux.
- Add the milk gradually while whisking until the mixture is smooth.
- Cook while stirring until the sauce coats the back of a spoon, about 3–5 minutes.
- Stir in peas and cook for 2–3 minutes until heated through.
- Taste and add salt and pepper as needed before serving.
Notes
Store in an airtight container for up to 3 days in the fridge. Gently reheat with a splash of milk for best texture.
