Description

A creamy, hearty soup that combines meat, beans, corn, and potatoes for a comforting meal.


Ingredients

  • 1 lb Ground Beef (or turkey or meat alternative)
  • 1 large Onion (yellow or white)
  • 3 cloves Garlic (minced)
  • 4 cups Beef Broth (or vegetable broth for vegetarian option)
  • 14.5 oz Diced Tomatoes (canned with juice)
  • 1 cup Corn (canned or frozen)
  • 15 oz Black Beans (drained and rinsed if canned)
  • 2 medium Potatoes (Yukon Gold or russet, diced small)
  • 1 tbsp Smoked Paprika
  • 1 tbsp Chili Powder (adjust for heat preference)
  • 1 tsp Cumin
  • 1 tsp Salt (adjust to taste)
  • 0.5 tsp Black Pepper (adjust to taste)
  • 1 cup Heavy Cream (or coconut milk for dairy-free)
  • 1 cup Shredded Cheddar Cheese (fresh cheese preferred)

Instructions

  1. Heat a large pot over medium-high heat. Add the ground beef and cook until browned. Drain fat if needed.
  2. Add chopped onion and cook for 3–4 minutes until soft. Stir in minced garlic and cook for 30 seconds.
  3. Stir in smoked paprika, chili powder, cumin, salt, and black pepper. Cook for 1 minute to bloom spices.
  4. Add diced potatoes, diced tomatoes with juice, corn, black beans, and beef broth. Stir to combine.
  5. Bring to a boil, then lower heat to a simmer. Cover and cook for 15–20 minutes until potatoes are tender.
  6. Reduce heat to low. Stir in heavy cream slowly and heat through but do not boil.
  7. Add shredded cheddar cheese and stir until melted and smooth.
  8. Taste and adjust salt and pepper. Serve hot.

Notes

Top with extra cheddar, chopped green onions, or a dollop of sour cream. Serve with crusty bread or cornbread.
