A creamy, hearty soup that combines meat, beans, corn, and potatoes for a comforting meal.
Ingredients
- 1 lb Ground Beef (or turkey or meat alternative)
- 1 large Onion (yellow or white)
- 3 cloves Garlic (minced)
- 4 cups Beef Broth (or vegetable broth for vegetarian option)
- 14.5 oz Diced Tomatoes (canned with juice)
- 1 cup Corn (canned or frozen)
- 15 oz Black Beans (drained and rinsed if canned)
- 2 medium Potatoes (Yukon Gold or russet, diced small)
- 1 tbsp Smoked Paprika
- 1 tbsp Chili Powder (adjust for heat preference)
- 1 tsp Cumin
- 1 tsp Salt (adjust to taste)
- 0.5 tsp Black Pepper (adjust to taste)
- 1 cup Heavy Cream (or coconut milk for dairy-free)
- 1 cup Shredded Cheddar Cheese (fresh cheese preferred)
Instructions
- Heat a large pot over medium-high heat. Add the ground beef and cook until browned. Drain fat if needed.
- Add chopped onion and cook for 3–4 minutes until soft. Stir in minced garlic and cook for 30 seconds.
- Stir in smoked paprika, chili powder, cumin, salt, and black pepper. Cook for 1 minute to bloom spices.
- Add diced potatoes, diced tomatoes with juice, corn, black beans, and beef broth. Stir to combine.
- Bring to a boil, then lower heat to a simmer. Cover and cook for 15–20 minutes until potatoes are tender.
- Reduce heat to low. Stir in heavy cream slowly and heat through but do not boil.
- Add shredded cheddar cheese and stir until melted and smooth.
- Taste and adjust salt and pepper. Serve hot.
Notes
Top with extra cheddar, chopped green onions, or a dollop of sour cream. Serve with crusty bread or cornbread.
