A delicious and comforting dish featuring tender chicken meatballs in a rich, creamy mushroom sauce, perfect for weeknight dinners.
Ingredients
- 1 pound ground chicken
- 1 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 8 ounces mushrooms, sliced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ teaspoon thyme
- ½ teaspoon paprika
- Fresh parsley for garnish
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, egg, garlic, onion powder, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until golden brown on all sides. Remove meatballs from the skillet and set aside.
- In the same skillet, add sliced mushrooms and cook until they are soft and browned.
- Pour in chicken broth, heavy cream, thyme, and paprika. Stir well and bring to a gentle simmer.
- Add the meatballs back into the skillet and cover. Let them cook for 10-15 minutes until cooked through, stirring occasionally.
- Taste and adjust seasoning if needed.
- Garnish with fresh parsley before serving.
Notes
Make sure not to overmix the chicken mixture to keep the meatballs tender. Adjust the thickness of the sauce by adding more or less chicken broth or cream according to your preference. Add grated Parmesan cheese to the sauce for extra flavor.
