Description
Creamy Queso Chicken Enchiladas are a warm, cheesy comfort dish that’s easy to make and perfect for a family meal.
Ingredients
- 2 cups cooked Chicken
- 1 can Green chilies
- 1 can Tomatoes with green chilies
- 1 packet Taco seasoning
- 8 Tortillas
- 1 cup Cheddar cheese
- 1 cup Sour cream
- 1 package Velveeta cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine cooked chicken, green chilies, tomatoes with green chilies, and taco seasoning.
- In a separate bowl, mix together the cheddar cheese and sour cream.
- Take a tortilla and spoon some of the chicken mixture into the center, then sprinkle with the cheddar cheese mixture. Roll the tortilla and place it seam-side down in a greased baking dish. Repeat with the remaining tortillas.
- Pour the Velveeta cheese over the top of the rolled enchiladas.
- Bake in the preheated oven for 25-30 minutes or until bubbly and heated through.

Notes
Use cooked rotisserie chicken to save time. Warm tortillas before filling to prevent cracking. For more texture, mix in black beans or corn.
