Quick and crispy hush puppies made with simple ingredients, perfect as a snack or side dish.
Ingredients
- 1 box Jiffy Cornbread Mix
- 1/2 cup buttermilk
- 1/4 cup panko bread crumbs
- 1/4 cup chopped green onions
- 1/4 cup diced bell pepper
- 1/4 cup corn kernels
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a mixing bowl, combine the cornbread mix, buttermilk, panko breadcrumbs, green onions, bell pepper, corn, egg, salt, and pepper. Stir until well blended.
- Heat oil in a deep frying pan over medium heat until hot.
- Using a spoon, scoop out small portions of the mixture and drop them into the oil. Fry until golden brown, about 3-4 minutes on each side.
- Remove from oil and let drain on paper towels. Serve warm.
Notes
For best texture, fry soon after mixing the batter. Serve with tartar sauce, ketchup, or spicy mayo.
