Description

Quick and crispy hush puppies made with simple ingredients, perfect as a snack or side dish.


Ingredients

  • 1 box Jiffy Cornbread Mix
  • 1/2 cup buttermilk
  • 1/4 cup panko bread crumbs
  • 1/4 cup chopped green onions
  • 1/4 cup diced bell pepper
  • 1/4 cup corn kernels
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the cornbread mix, buttermilk, panko breadcrumbs, green onions, bell pepper, corn, egg, salt, and pepper. Stir until well blended.
  2. Heat oil in a deep frying pan over medium heat until hot.
  3. Using a spoon, scoop out small portions of the mixture and drop them into the oil. Fry until golden brown, about 3-4 minutes on each side.
  4. Remove from oil and let drain on paper towels. Serve warm.

Notes

For best texture, fry soon after mixing the batter. Serve with tartar sauce, ketchup, or spicy mayo.
