A delicious, hearty chicken noodle soup made in a slow cooker, perfect for chilly days or when craving comfort food.
Ingredients
- 2 boneless, skinless chicken breasts
- 3 celery stalks, diced
- 3 medium carrots, peeled and sliced
- 4 cloves garlic, minced
- 1 small yellow onion, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 6 cups chicken broth
- 1 cup heavy cream or half-and-half
- 1/4 cup all-purpose flour
- 1 cup egg noodles or any pasta of your choice
- Salt and pepper to taste
- Optional garnishes: Fresh parsley, chives, or grated parmesan cheese
Instructions
- Prepare all ingredients by dicing celery, carrots, and onion, and mincing garlic.
- Place chicken breasts at the bottom of the crockpot and layer diced vegetables on top.
- Sprinkle dried thyme, basil, and oregano over the vegetables.
- Pour chicken broth over the mixture, ensuring everything is submerged.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before the cooking time ends, shred the chicken and return it to the crockpot.
- In a small bowl, whisk together flour and cream until smooth, then stir into the crockpot to thicken the soup.
- Add the noodles and cook on high for an additional 20-30 minutes until tender.
- Season to taste, ladle into bowls, and garnish if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut milk. You can also customize the vegetables based on your preferences.
