Ingredients
- 1 cup pumpkin puree
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup maple syrup (for glaze)
- 1 cup powdered sugar (for glaze)
Instructions
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add pumpkin puree, egg, and vanilla extract. Mix well.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Cover and refrigerate dough for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Drop dough by rounded tablespoons onto sheet, spacing 2 inches apart.
- Bake for 10–12 minutes until edges are golden and centers are set.
- Cool on sheet for 5 minutes, then transfer to wire rack to cool completely.
- Prepare glaze by whisking together maple syrup and powdered sugar until smooth.
- Drizzle glaze over cooled cookies and let set before serving.
Notes
For extra flavor, top with chopped pecans or sprinkle of sea salt. Store in airtight container for up to 1 week or freeze for longer storage.
