Description

Ingredients

  • 2 1/2 cups all-purpose flour, spooned and leveled
  • 1 cup dark molasses
  • 1 cup lightly packed brown sugar
  • 3/4 cup neutral oil (like canola or vegetable)
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • Optional glaze: 1 cup powdered sugar, 2 to 3 tablespoons milk or cream, 1/2 teaspoon vanilla

Instructions

  1. Prep the pan: Heat oven to 350°F. Grease a 10 to 12 cup bundt pan thoroughly.
  2. Mix the dry ingredients: In a large bowl, whisk flour, ginger, cinnamon, cloves, baking soda, baking powder, and salt until evenly combined.
  3. Combine the wet ingredients: In a separate bowl, whisk molasses, brown sugar, oil, eggs, and buttermilk until smooth.
  4. Bring it together: Pour wet ingredients into dry and whisk until just combined.
  5. Bake: Pour batter into prepared pan and bake for 45 to 55 minutes. A skewer should come out with a few moist crumbs.
  6. Cool and release: Let the cake cool in the pan for 12 to 15 minutes, then flip onto a wire rack carefully.
  7. Glaze: Once barely warm, whisk glaze ingredients and spoon over the top.
