Description

A fun and tangy pasta salad featuring dill pickles and creamy dressing, perfect for picnics and barbecues.


Ingredients

  • 1 Cucumber
  • 2 tbsp Dill, fresh
  • 1 tsp Garlic powder
  • 1 small Red onion
  • 1 Yellow bell pepper
  • 150 g Dill pickles
  • 120 g Mayonnaise
  • 60 ml Pickle juice
  • 225 g Rotini pasta
  • 1/2 tsp Black pepper
  • 120 g Sour cream or Greek yogurt

Instructions

  1. Cook the rotini pasta according to package instructions, then drain and allow to cool.
  2. In a large mixing bowl, combine the mayonnaise, sour cream or Greek yogurt, pickle juice, garlic powder, and black pepper.
  3. Chop the cucumber, red onion, yellow bell pepper, and dill pickles into small pieces and add them to the bowl.
  4. Mix in the cooled pasta and fresh dill, stirring until everything is well combined.
  5. Refrigerate for at least 25 minutes before serving to allow the flavors to meld.

Notes

Serve cold as a side dish or light lunch. Garnish with extra dill for added flavor.
