Impressive and creamy Duchess Potatoes, perfect for any occasion.
Ingredients
- 2 pounds russet potatoes, peeled and cubed
- ½ cup unsalted butter, softened
- ½ cup heavy cream
- 2 egg yolks
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley or chives for garnish (optional)
- 1 tablespoon olive oil (for greasing the baking sheet)
Instructions
- Boil a large pot of salted water. Add the peeled and cubed potatoes and cook for about 15-20 minutes, until soft and fork-tender.
- Drain the potatoes and let them sit for a minute to remove excess moisture.
- In a large bowl, mash the cooked potatoes until smooth, then add butter, heavy cream, egg yolks, garlic powder, onion powder, salt, and pepper. Mix until creamy.
- Preheat oven to 400°F (200°C) and grease a baking sheet with olive oil.
- Transfer potato mixture to a piping bag fitted with a star tip and pipe onto the prepared baking sheet.
- Bake for 20-25 minutes, until golden brown and crispy on top.
Notes
For added flavor, try mixing in cheese or different herbs.
