Description

Impressive and creamy Duchess Potatoes, perfect for any occasion.


Ingredients

  • 2 pounds russet potatoes, peeled and cubed
  • ½ cup unsalted butter, softened
  • ½ cup heavy cream
  • 2 egg yolks
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish (optional)
  • 1 tablespoon olive oil (for greasing the baking sheet)

Instructions

  1. Boil a large pot of salted water. Add the peeled and cubed potatoes and cook for about 15-20 minutes, until soft and fork-tender.
  2. Drain the potatoes and let them sit for a minute to remove excess moisture.
  3. In a large bowl, mash the cooked potatoes until smooth, then add butter, heavy cream, egg yolks, garlic powder, onion powder, salt, and pepper. Mix until creamy.
  4. Preheat oven to 400°F (200°C) and grease a baking sheet with olive oil.
  5. Transfer potato mixture to a piping bag fitted with a star tip and pipe onto the prepared baking sheet.
  6. Bake for 20-25 minutes, until golden brown and crispy on top.
