Ingredients
- 1 lb Boneless skinless Chicken breast
- 1 medium Bell pepper
- 2 cloves Garlic
- 2 tbsp Green onions
- 1 medium Onion
- 2 cups Low-sodium Chicken broth
- 1 cup Long-grain White rice or jasmine rice
- 2 tbsp Cajun seasoning
- 1 cup Heavy cream
Instructions
- Heat a bit of oil in a large skillet over medium heat.
- Add diced chicken and cook until browned and cooked through.
- Add chopped onion, bell pepper, and garlic. Sauté until vegetables soften.
- Stir in Cajun seasoning to coat the chicken and vegetables.
- Add rice and chicken broth; bring to a boil.
- Lower the heat, cover, and simmer until rice is tender, about 18-20 minutes.
- Stir in heavy cream and green onions. Heat through, taste, and adjust seasoning.
- Serve warm in bowls and enjoy.
Notes
Serve hot in bowls topped with extra green onions, lemon, or parsley. Add a side of steamed vegetables for balance.
