Description

A quick, creamy one-pan meal ready in about 30 minutes, perfect for a cozy weeknight dinner.


Ingredients

  • 1 lb Boneless skinless Chicken breast
  • 1 medium Bell pepper
  • 2 cloves Garlic
  • 2 tbsp Green onions
  • 1 medium Onion
  • 2 cups Low-sodium Chicken broth
  • 1 cup Long-grain White rice or jasmine rice
  • 2 tbsp Cajun seasoning
  • 1 cup Heavy cream

Instructions

  1. Heat a bit of oil in a large skillet over medium heat.
  2. Add diced chicken and cook until browned and cooked through.
  3. Add chopped onion, bell pepper, and garlic. Sauté until vegetables soften.
  4. Stir in Cajun seasoning to coat the chicken and vegetables.
  5. Add rice and chicken broth; bring to a boil.
  6. Lower the heat, cover, and simmer until rice is tender, about 18-20 minutes.
  7. Stir in heavy cream and green onions. Heat through, taste, and adjust seasoning.
  8. Serve warm in bowls and enjoy.

Notes

Serve hot in bowls topped with extra green onions, lemon, or parsley. Add a side of steamed vegetables for balance.
