Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar (for crust)
- 2 cups all-purpose flour (for crust)
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar (for filling)
- 1/2 cup freshly squeezed lemon juice (about 2–3 lemons)
- 1/4 cup all-purpose flour (for filling)
- 1 teaspoon baking powder
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Cream together the softened butter and 1 cup sugar until smooth.
- Add 2 cups flour and 1/2 teaspoon salt until well combined. Press the mixture into the bottom of the prepared baking dish.
- Bake in the preheated oven for 15–20 minutes, or until lightly golden.
- Whisk together the eggs, 1 cup sugar, lemon juice, 1/4 cup flour, and baking powder. Pour over the pre-baked crust.
- Bake for an additional 20–25 minutes, or until set.
- Let cool before dusting with powdered sugar and cutting into squares.
