Bright, comforting, and fast, this Easy Lemon Chicken Orzo Soup features tender chicken and orzo in a zesty, flavorful broth.
Ingredients
- 1 cup orzo pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic. Sauté until softened, about 3–4 minutes.
- Stir in sliced carrots and celery and cook 4–5 minutes.
- Pour in the chicken broth and bring to a boil.
- Add the orzo and cook according to package instructions, usually 8–10 minutes, stirring occasionally.
- Stir in shredded chicken and lemon juice, then season with salt and pepper. Simmer a few more minutes to heat through.
- Serve garnished with chopped fresh parsley.
Notes
For a lighter touch, reserve some lemon juice and add at serving time for an extra lift of brightness.
