Ingredients

  • 1 cup orzo pasta
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Sauté until softened, about 3–4 minutes.
  3. Stir in sliced carrots and celery and cook 4–5 minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the orzo and cook according to package instructions, usually 8–10 minutes, stirring occasionally.
  6. Stir in shredded chicken and lemon juice, then season with salt and pepper. Simmer a few more minutes to heat through.
  7. Serve garnished with chopped fresh parsley.

Notes

For a lighter touch, reserve some lemon juice and add at serving time for an extra lift of brightness.
