Description
A warm and comforting dish combining tender beef, sweet apple cider, and creamy cheddar mashed potatoes, perfect for chilly days.
Ingredients
- 1 tablespoon olive oil
- 2 tablespoons butter
- 340 grams (3/4 pound) top sirloin, cut into cubes
- Salt, to taste
- Black pepper, to taste
- 2 medium carrots, diced
- 3 tablespoons chives, chopped
- 1 large onion, chopped
- 6 large potatoes, peeled and chopped
- 1/2 cup beef broth
- 2 cups apple cider
- 1 cup sharp cheddar cheese, grated
- 1/4 cup milk
- 1/4 cup sour cream
Instructions
- In a large pot, heat the olive oil and butter over medium heat. Add the cubed beef and sear until browned on all sides. Season with salt and black pepper. Remove the beef and set aside.
- In the same pot, add the onions and carrots, and sauté until softened.
- Return the beef to the pot and add the beef broth and apple cider. Bring to a boil, then reduce to a simmer. Cover and let cook for about 60 minutes or until the beef is tender.
- While the stew is simmering, prepare the cheddar mashed potatoes. Boil the chopped potatoes in salted water until tender, then drain. Mash the potatoes and mix in the cheddar cheese, milk, sour cream, and chives.
- Serve the cider stew on top of the cheddar mashed potatoes.
Notes
For extra flavor, consider marinating the beef in apple cider for a few hours before cooking. For a thicker sauce, mix cornstarch with water during the last minutes of cooking. For a lighter version, substitute half of the potatoes with cauliflower.
