Ingredients

- 1 cup (240ml) non-dairy milk (almond, soy, or coconut)
- 2 tablespoons melted vegan butter or coconut oil
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice or apple cider vinegar
Instructions
- In a large bowl, whisk together the dry ingredients: flour, baking powder, and salt.
- In a separate bowl, combine the wet ingredients: non-dairy milk, melted vegan butter, vanilla extract, and lemon juice or vinegar.
- Gently fold the wet ingredients into the dry ingredients until combined; the batter should be slightly lumpy.
- Let the batter rest for 5 minutes before cooking.
- Cook pancakes on a medium heat skillet, flipping when bubbles form on the surface.
- Serve warm with your favorite toppings.
Notes
For added flavor, mix in chocolate chips, berries, or bananas into the batter before cooking. Ensure to not overmix the batter for fluffiness.
