  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice or apple cider vinegar

Instructions

  1. In a large bowl, whisk together the dry ingredients: flour, baking powder, and salt.
  2. In a separate bowl, combine the wet ingredients: non-dairy milk, melted vegan butter, vanilla extract, and lemon juice or vinegar.
  3. Gently fold the wet ingredients into the dry ingredients until combined; the batter should be slightly lumpy.
  4. Let the batter rest for 5 minutes before cooking.
  5. Cook pancakes on a medium heat skillet, flipping when bubbles form on the surface.
