Ingredients

  • 2 cups cooked Chicken
  • 3 Garlic cloves, minced
  • 1/2 tsp Thyme, dried
  • 2 large Yellow onions, sliced
  • 2 cups low-sodium Chicken broth
  • 1 1/2 cups Orzo pasta
  • 1/4 tsp Black pepper
  • 1/2 tsp Salt
  • 1 tsp Sugar
  • 1 tbsp Olive oil
  • 2 tbsp unsalted Butter
  • 1 cup Heavy cream
  • 1 1/2 cups Mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium heat. Add sliced onions and cook until caramelized, about 10-15 minutes.
  3. Add minced garlic and thyme, cooking until fragrant.
  4. Stir in the chicken broth and bring it to a simmer.
  5. Incorporate cooked chicken, orzo, salt, pepper, and sugar. Cook for another 5 minutes.
  6. Stir in heavy cream and mix well.
  7. Transfer the mixture to a casserole dish. Top it with mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 25-30 minutes until bubbly and golden.
  9. Let it cool slightly before serving.
