Ingredients

  • 1 tsp Ginger, ground
  • 2 Eggs, large
  • 1 1/4 cup Molasses
  • 3 cups All purpose flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 cup Brown sugar, packed dark
  • 3 tsp Cinnamon, ground
  • 1/2 tsp Cloves, ground
  • 1 cup Granulated sugar
  • 1/4 tsp Nutmeg, ground
  • 4 cups Powdered sugar
  • 1/2 tsp Salt
  • 1 tsp Vanilla extract
  • 2 cup Butter, unsalted
  • 1/4 cup Buttermilk
  • 1/4 cup Milk
  • 1 cup Water, hot

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your baking pan.
  2. In a large bowl, cream together the butter and sugars until light and fluffy.
  3. Add the eggs, molasses, and vanilla extract to the creamed mixture and mix well.
  4. In another bowl, combine the flour, baking powder, baking soda, spices (ginger, cinnamon, cloves, nutmeg), and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk and hot water. Mix until just combined.
  6. Pour the batter into the prepared pans and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool.
  9. For frosting, beat together the powdered sugar, butter, and a little milk until smooth and creamy. Adjust consistency with more milk or powdered sugar as needed.
  10. Spread the frosting over the cooled gingerbread cake and serve.

Notes

Ensure all ingredients are at room temperature for better mixing. Dark molasses enhances flavor. Customize with nuts or raisins.
