Ingredients
- 1 tsp Ginger, ground
- 2 Eggs, large
- 1 1/4 cup Molasses
- 3 cups All purpose flour
- 1 tsp Baking powder
- 1 tsp Baking soda
- 1 cup Brown sugar, packed dark
- 3 tsp Cinnamon, ground
- 1/2 tsp Cloves, ground
- 1 cup Granulated sugar
- 1/4 tsp Nutmeg, ground
- 4 cups Powdered sugar
- 1/2 tsp Salt
- 1 tsp Vanilla extract
- 2 cup Butter, unsalted
- 1/4 cup Buttermilk
- 1/4 cup Milk
- 1 cup Water, hot
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour your baking pan.
- In a large bowl, cream together the butter and sugars until light and fluffy.
- Add the eggs, molasses, and vanilla extract to the creamed mixture and mix well.
- In another bowl, combine the flour, baking powder, baking soda, spices (ginger, cinnamon, cloves, nutmeg), and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk and hot water. Mix until just combined.
- Pour the batter into the prepared pans and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool.
- For frosting, beat together the powdered sugar, butter, and a little milk until smooth and creamy. Adjust consistency with more milk or powdered sugar as needed.
- Spread the frosting over the cooled gingerbread cake and serve.
Notes
Ensure all ingredients are at room temperature for better mixing. Dark molasses enhances flavor. Customize with nuts or raisins.
