Description
A healthy and quick grilled chicken salad loaded with fresh vegetables and feta cheese.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 4 cups mixed salad greens (like lettuce, spinach, and arugula)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup your favorite salad dressing
Instructions
- Preheat your grill to medium-high heat.
- Brush the chicken breasts with olive oil and season with salt and pepper.
- Place the chicken on the grill and cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C).
- Once cooked, remove the chicken from the grill and let it rest for a few minutes.
- While the chicken is resting, prepare the salad. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
- Slice the grilled chicken into thin strips and add it to the salad.
- Top with crumbled feta cheese and drizzle your favorite dressing over the salad.
- Toss everything gently to combine and serve immediately.
Notes
Marinate the chicken for extra flavor and use a meat thermometer for perfect cooking.
