Description

A healthy and quick grilled chicken salad loaded with fresh vegetables and feta cheese.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 4 cups mixed salad greens (like lettuce, spinach, and arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup your favorite salad dressing

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the chicken breasts with olive oil and season with salt and pepper.
  3. Place the chicken on the grill and cook for about 6-7 minutes on each side or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
  5. While the chicken is resting, prepare the salad. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  6. Slice the grilled chicken into thin strips and add it to the salad.
  7. Top with crumbled feta cheese and drizzle your favorite dressing over the salad.
  8. Toss everything gently to combine and serve immediately.
