Hamburger Vegetable Soup

Description

A hearty and nutritious soup made with ground beef and fresh vegetables, perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef (90% lean)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 large carrots, sliced
  • 2 celery stalks, chopped
  • 3 medium potatoes, cubed
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 cup frozen green beans
  • 1 cup frozen peas or corn
  • 4 cups beef broth
  • 1 bay leaf
  • 1 tsp dried thyme (or fresh thyme, if available)
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional, for sautéing)

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Break the beef apart as it cooks. Drain any excess fat and set the beef aside.
  2. In the same pot, add a tablespoon of olive oil (if needed) and sauté the diced onions, garlic, carrots, and celery until they soften, about 5 minutes.
  3. Stir in the cubed potatoes and diced tomatoes (with their juice). Continue to cook for another 2-3 minutes, allowing the vegetables to absorb the flavors.
  4. Add the beef broth, bay leaf, thyme, and the browned beef back into the pot. Bring the soup to a simmer over medium heat, then reduce the heat to low. Cover and let it simmer for 20-25 minutes until the potatoes are tender.
  5. Stir in the frozen green beans, peas, or corn during the last 5 minutes of cooking. Season with salt and pepper to taste.
  6. Remove the bay leaf, taste the soup, and adjust the seasonings as needed. Ladle the soup into bowls and serve hot.

Notes

For a heartier version, you can add cooked pasta during the last 5 minutes of cooking. Customize the vegetables based on your preferences.
