Description
A hearty and nutritious soup made with ground beef and fresh vegetables, perfect for weeknight dinners.
Ingredients
- 1 lb ground beef (90% lean)
- 1 onion, diced
- 2 cloves garlic, minced
- 3 large carrots, sliced
- 2 celery stalks, chopped
- 3 medium potatoes, cubed
- 1 can (14.5 oz) diced tomatoes (with juices)
- 1 cup frozen green beans
- 1 cup frozen peas or corn
- 4 cups beef broth
- 1 bay leaf
- 1 tsp dried thyme (or fresh thyme, if available)
- Salt and pepper to taste
- 1 tbsp olive oil (optional, for sautéing)
Instructions
- In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Break the beef apart as it cooks. Drain any excess fat and set the beef aside.
- In the same pot, add a tablespoon of olive oil (if needed) and sauté the diced onions, garlic, carrots, and celery until they soften, about 5 minutes.
- Stir in the cubed potatoes and diced tomatoes (with their juice). Continue to cook for another 2-3 minutes, allowing the vegetables to absorb the flavors.
- Add the beef broth, bay leaf, thyme, and the browned beef back into the pot. Bring the soup to a simmer over medium heat, then reduce the heat to low. Cover and let it simmer for 20-25 minutes until the potatoes are tender.
- Stir in the frozen green beans, peas, or corn during the last 5 minutes of cooking. Season with salt and pepper to taste.
- Remove the bay leaf, taste the soup, and adjust the seasonings as needed. Ladle the soup into bowls and serve hot.
Notes
For a heartier version, you can add cooked pasta during the last 5 minutes of cooking. Customize the vegetables based on your preferences.
