Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 pound chicken breast, diced
  • 4 cups chicken broth
  • 2 cups mixed vegetables (green beans, corn, peas)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Sauté until softened, about 5–7 minutes.
  3. Stir in the garlic and diced chicken. Cook until the chicken is browned on all sides.
  4. Pour in the chicken broth and bring to a boil. Add thyme and bay leaf.
  5. Add mixed vegetables, salt, and pepper. Reduce heat and simmer for 20–25 minutes.
  6. Remove the bay leaf and taste. Adjust seasoning as needed.
  7. Serve hot with chopped parsley for garnish if desired.

Notes

Brown the chicken in batches if needed to avoid crowding. Use low-sodium broth so you can control salt at the end.
