Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 pound chicken breast, diced
- 4 cups chicken broth
- 2 cups mixed vegetables (green beans, corn, peas)
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Sauté until softened, about 5–7 minutes.
- Stir in the garlic and diced chicken. Cook until the chicken is browned on all sides.
- Pour in the chicken broth and bring to a boil. Add thyme and bay leaf.
- Add mixed vegetables, salt, and pepper. Reduce heat and simmer for 20–25 minutes.
- Remove the bay leaf and taste. Adjust seasoning as needed.
- Serve hot with chopped parsley for garnish if desired.
Notes
Brown the chicken in batches if needed to avoid crowding. Use low-sodium broth so you can control salt at the end.
