Description

A creamy, savory soup featuring bacon and Italian sausage, enhanced by cauliflower and kale, perfect for a keto diet.


Ingredients

  • 4 slices Bacon
  • 1 lb Italian sausage, ground
  • 2 cups Cauliflower florets
  • 1/2 tsp Garlic powder
  • 2 cups Kale
  • 1/4 cup White onion, chopped
  • 32 fl oz Chicken broth
  • 1/4 tsp Black pepper, ground
  • 2 tsp Italian seasoning
  • 1 tsp Salt
  • 2 tbsp Olive oil
  • 1/2 cup Heavy whipping cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped bacon and cook until crispy.
  2. Add ground Italian sausage and cook until browned.
  3. Stir in chopped onion and garlic powder, cooking until onion is translucent.
  4. Add cauliflower florets and chicken broth, bringing to a boil.
  5. Reduce heat and simmer until cauliflower is tender, about 10 minutes.
  6. Add chopped kale, heavy cream, salt, black pepper, and Italian seasoning. Cook for another 5 minutes until kale is wilted.
  7. Serve hot.

Notes

Chop the cauliflower into even pieces for even cooking. Use bone broth for richer taste. Add cream last and heat gently to avoid curdling.
