Ingredients

  • 3 large eggs
  • 1 cup cake flour
  • 1 can cherry pie filling
  • 1 cup powdered sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
  2. In a bowl, beat the eggs and granulated sugar until light and fluffy.
  3. Gently fold in the cake flour until well combined.
  4. Spread the batter evenly in the prepared pan and bake for 12-15 minutes or until golden.
  5. While the cake is baking, mix the cream cheese, powdered sugar, vanilla extract, and heavy cream in a separate bowl until smooth.
  6. Once the cake is done, remove it from the oven and let it cool slightly before inverting it onto a clean kitchen towel dusted with powdered sugar.
  7. Spread the cherry pie filling and cream cheese mixture over the surface of the cake.
  8. Carefully roll the cake with the filling inside, starting from one short end.
  9. Wrap it in the towel and let it cool completely in the fridge for at least 1 hour before slicing and serving.
