Ingredients
- 3 large eggs
- 1 cup cake flour
- 1 can cherry pie filling
- 1 cup powdered sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a 15×10 inch jelly roll pan with parchment paper.
- In a bowl, beat the eggs and granulated sugar until light and fluffy.
- Gently fold in the cake flour until well combined.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes or until golden.
- While the cake is baking, mix the cream cheese, powdered sugar, vanilla extract, and heavy cream in a separate bowl until smooth.
- Once the cake is done, remove it from the oven and let it cool slightly before inverting it onto a clean kitchen towel dusted with powdered sugar.
- Spread the cherry pie filling and cream cheese mixture over the surface of the cake.
- Carefully roll the cake with the filling inside, starting from one short end.
- Wrap it in the towel and let it cool completely in the fridge for at least 1 hour before slicing and serving.
Notes
Ensure eggs and cream cheese are at room temperature for better mixing. Use a generous amount of powdered sugar on the towel to prevent sticking.
