Homemade Chocolate Cadbury Egg Cookies

Description

Soft, rich cookies filled with crunchy chocolate mini eggs and a deep cocoa flavor. Perfect for holidays and parties.


Ingredients

  • 1 1/2 cups Chocolate mini eggs
  • 1 Egg
  • 1/2 tsp Baking soda
  • 3/4 cup Cocoa powder
  • 1 1/4 cups Flour
  • 1/4 tsp Salt
  • 1/2 tsp Flaky salt (for finishing)
  • 1 cup Sugar
  • 1 1/2 tsp Vanilla extract
  • 1/2 tsp Espresso powder
  • 10 tbsp Butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract to the mixture and mix well.
  4. Combine the flour, cocoa powder, baking soda, salt, and espresso powder in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until well blended.
  6. Fold in the chocolate mini eggs gently.
  7. Drop heaping tablespoons of dough onto a lined baking sheet.
  8. Bake for 10–12 minutes or until the edges are set.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a variation, add chopped dark chocolate or try a vegan version using dairy-free butter and a flax egg.
