Description
Delicious mini cornbread bites infused with honey and butter, perfect for snacks or sides.
Ingredients
- 2 Eggs
- 1/4 cup Honey
- 1 cup All-purpose flour
- 1 tbsp Baking powder
- 1 cup Cornmeal
- 1/2 tsp Salt
- 1/4 cup Sugar
- 1/2 cup Butter
- 1 cup Buttermilk
Instructions
- Preheat the oven to 350°F (175°C). Grease a mini muffin tin.
- Whisk together the eggs and honey until combined.
- Add the melted butter and buttermilk, mixing well.
- Combine the all-purpose flour, cornmeal, baking powder, salt, and sugar in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fill each muffin cup about 3/4 full with the batter.
- Bake for 15-20 minutes or until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before serving.
Notes
Serve warm with melted butter and honey for drizzling. Great as a side or snack, these poppers are easy to prepare and enjoyable for everyone.
