Ingredients
- 2 Chicken breasts, boneless skinless
- 1 Avocado
- 1/4 cup Cilantro, fresh
- Zest of 1 Lime
- 1 Lime, wedges
- Juice of 2 Limes
- 1/4 cup Red onion, diced
- 2 cups Chicken broth
- 1/4 cup Honey
- 1 cup Jasmine rice
- 2 Cloves Garlic, minced
- Salt and pepper to taste
- 1 tbsp Olive oil
- 1 tsp Cumin, ground
Instructions
- Marinate the chicken breasts in a mix of honey, lime juice, lime zest, cumin, salt, and pepper for at least 30 minutes.
- In a pot, bring the chicken broth to a boil, add jasmine rice, and cook according to package instructions.
- Heat olive oil in a skillet over medium heat, cook the marinated chicken until fully cooked, about 7-8 minutes per side.
- Remove chicken and let it rest before slicing.
- To assemble, layer the cooked rice at the bottom, top with sliced avocado, cilantro, red onion, and the sliced chicken.
- Serve with lime wedges on the side.
Notes
For extra flavor, marinate chicken for a few hours or overnight. Use fresh lime juice for optimal taste. Chicken should reach an internal temperature of 165°F.
