Ingredients

  • 2 Chicken breasts, boneless skinless
  • 1 Avocado
  • 1/4 cup Cilantro, fresh
  • Zest of 1 Lime
  • 1 Lime, wedges
  • Juice of 2 Limes
  • 1/4 cup Red onion, diced
  • 2 cups Chicken broth
  • 1/4 cup Honey
  • 1 cup Jasmine rice
  • 2 Cloves Garlic, minced
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 1 tsp Cumin, ground

Instructions

  1. Marinate the chicken breasts in a mix of honey, lime juice, lime zest, cumin, salt, and pepper for at least 30 minutes.
  2. In a pot, bring the chicken broth to a boil, add jasmine rice, and cook according to package instructions.
  3. Heat olive oil in a skillet over medium heat, cook the marinated chicken until fully cooked, about 7-8 minutes per side.
  4. Remove chicken and let it rest before slicing.
  5. To assemble, layer the cooked rice at the bottom, top with sliced avocado, cilantro, red onion, and the sliced chicken.
  6. Serve with lime wedges on the side.

Notes

For extra flavor, marinate chicken for a few hours or overnight. Use fresh lime juice for optimal taste. Chicken should reach an internal temperature of 165°F.
