Delicious low-carb roll-ups featuring traditional Reuben flavors without the bread.
Ingredients
- 1/2 lb Corned beef deli meat
- 1 cup Sauerkraut
- 1 tbsp Horseradish sauce
- 1 1/2 tbsp Ketchup (Sugar-Free)
- 1/4 cup Mayonnaise
- 1 tsp Worcestershire sauce
- 1 pinch Paprika
- 2 tsp Swerve confectioner’s sugar substitute
- 2 cups Swiss cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine sauerkraut, horseradish sauce, ketchup, mayonnaise, Worcestershire sauce, paprika, and Swerve sugar substitute. Mix well.
- Lay out the slices of Swiss cheese on a baking sheet lined with parchment paper.
- Divide the corned beef evenly across the cheese slices, then top with the sauerkraut mixture.
- Roll up the cheese around the filling, securing with a toothpick if necessary.
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is crispy and golden.

Notes
